Description 

Rich, creamy and with just the right amount of heat, this Creamy Tomato Vodka Pasta Sauce is a collaboration between The Saucerer and Soho Italian-American restaurant Grasso. Inspired by a family recipe, it takes a classic tomato sauce and gives it a richer, more indulgent finish with coconut cream, a splash of vodka and warming chilli.

Tomatoes and tomato paste create the deep, savoury base, while garlic, cider vinegar, paprika and olive oil bring plenty of flavour. Coconut cream gives the sauce its smooth, velvety texture without the need for dairy, while 3% vodka and a touch of Demerara sugar round everything out. The result is comforting, slightly spicy and incredibly easy to use. 

Simply warm it through and toss generously with your favourite pasta for an effortless dinner, or use it as a base for other dishes. It is also brilliant for mopping up with crusty bread – or, as Grasso suggests, finishing the bowl properly with a scarpetta. Made using natural ingredients and a vegan recipe, it brings a little Soho Italian-American attitude to dinner at home
